Cafe prepares for 'busiest Tuesday of the year'
George Carden/BBCA café which changes its entire menu for pancake day is preparing for its "busiest Tuesday of the year".
Owner Tony Marks said Starfish and Coffee in Egremont Place, Brighton was nearly fully booked for the day due to the half term holiday.
"We put our regular menu to one side, we devote the whole day to making our famous pancakes," he said.
While head chef Marcin Sulek said they had got some new pans especially for the day.
George Carden/BBCMarks said: "It's a double whammy of having pancake day and people in Brighton with time off.
"We're pretty much 75% booked and will get lots of walk ins as well."
He said there had been bookings in since three months ago, for people who wanted to make sure they got a table.
Some of the pancakes include a shakshuka topped pancake, lentil ragu pancake, as well as sweet options.
"We try not to go down the purely sweet pancake route, but we have some really indulgent ones like the Baileys chocolate mousse with lemon ricotta and caramelised banana," Marks added.
Sulek said the day was going to be "very busy" cooking hundreds of pancakes.
Pancake day, or Shrove Tuesday, is a Christian festival marked all over the world.
Christians eat pancakes on the last day before Lent begins, to use up things in the cupboard like flour, eggs and milk that they would not be eating for Lent.
