Carl Cleghorn
Carl grew up in Cardiff, South Wales, and began his culinary journey at the age of 16 when he took his first professional kitchen job.

In 2013, he moved to Bath to work alongside his brother, Chris Cleghorn, at the Queensberry Hotel & The Olive Tree Restaurant, both Michelin-starred with 3 Rosettes.
Following this, Carl moved to Wiltshire to work as head chef for Richard Davies at The Manor House in Castle Combe, a five-star hotel with a Michelin-starred, 3 Rosette restaurant. In 2020, he became Executive Chef at Thornbury Castle in Bristol, where his passion and leadership earned the hotel its first three AA Rosettes.
Now, through his venture Tyme by Carl Cleghorn based in Newport, South Wales, he delivers bespoke, private dining experiences, events and popups, with a modern British and world influence style he brings fine-dining directly to clients across the UK. Carl has represented Wales at prestigious venues including 10 Downing Street and the House of Commons, and has cooked for celebrities, royalty, and national events.
As a finalist of National Chef of the Year he’s no stranger to competition, his menu is creative and draws on his love of film, Welsh actors and filming locations.
