Since his last appearance in the competition, John has opened his first bricks and mortar restaurant, AngloThai in Central London with his wife and business partner, Desiree. The restaurant earned a Michelin star just three months after opening.
Born to a Thai father and a British mother, and raised in the Wye Valley, John’s food reflects the dual influences that shaped him. He trained at Le Cordon Bleu Dusit in Bangkok and went on to work at Nahm under David Thompson, then rated the best restaurant in Asia. After years of pop-ups and residencies across the UK, Europe, North America, and Southeast Asia, he has established AngloThai as the UK’s only Michelin-starred Thai restaurant.
John is known for crafting seasonal menus that fuse bold Thai flavours with modern technique and the best of British produce. As he returns to the GBM kitchen, he hopes to push himself further than before - and aims to become the first Thai chef to reach the banquet.
