Before arriving in North Wales, Dan honed his skills at Beach House Restaurant in Oxwich, where he worked closely with Hywel Griffith and helped the restaurant maintain its Michelin star.

At Penmaenuchaf, Dan leads the hotel’s fine-dining restaurant, Afon, and its accompanying kitchens, embracing the dramatic landscape and rich local larder of Snowdonia. He sources ingredients from the region’s producers and from the hotel’s own kitchen garden, ensuring menus reflect the rhythms of the seasons, the mountains, the sea and the estuary below.

His cooking combines respect for regional Welsh produce - seafood, game and foraged ingredients. Whether crafting elegant tasting menus or hearty seasonal fare, Dan seeks to offer guests dishes that speak to the land, the sea and the heritage of North Wales.
