Crick (left) and Aitkin were both on target for Scottish at Springfield
Island striker Ross Crick's volley after eight minutes of extra time ensured Jersey Scottish retained the Le Riche Cup on Tuesday night.
Saints should have taken the lead after half an hour, but Craig Russell saw his penalty saved after he had been brought down by Craig Fletcher.
Paul Aitkin then put Scottish ahead after 50 minutes but within two minutes Mark Lucas had equalised.
Neither side could break the deadlock until Crick's extra-time strike.
It is the fifth time in eight seasons that Scottish have won the Island's premier cup competition.
"It was a smashing result and I'm made up for the boys, because it's the only silverware that we're going to get this season," Scottish boss Pat Brennan told BBC Jersey.
"The two teams know each other well and it made it an even game. It could have gone either way, luckily we got the goal in extra time and I think it was too late for them."
And Brennan was quick to praise not just Crick, who has returned to goal-scoring form after injury kept him out for much of the season, but some of his other veteran players as well.
"Crick's a great centre forward and a great finisher, there's not many like him," said Brennan.
"But we've not just had Ross missing, Dave Brodie has been out all year, Mark Brown's hardly played and Ali Santos has been in and out.
"But all these guys are getting on so I think we're going to have to go on recruitment drive for next season," Brennan added.
