Originally from Leeds, his first passion was art but eight weeks into his college course he realised it wasn’t for him so Mini ventured into food.
He gained experience at catering college and went on to learn from a succession of legendary chefs, including Gordon Ramsay, Marco Pierre White and Great British Menu veteran Angela Hartnett at Michelin starred The Connaught.
His menu draws on his passion for Yorkshire produce and the skills and traditions of the Women’s Institute.
