Cider vinegar recipes

Sometimes called apple cider vinegar, cider vinegar, is made from apple juice. The juice is fermented into cider, after which a vinegar 'mother' (a harmless, gelatinous disc made up of cellulose, yeast and bacteria) is added. This feeds on the alcohol and sugars, creating acetic acid (the main component of vinegar).

Apple cider vinegar is often sold with the 'mother’ – this means it is unfiltered and will contain more of the enzymes and gut-friendly bacteria.

Cider vinegar is used in salad dressings, marinades and preserves. Don't worry if you find a sediment at the bottom of the bottle, this is natural and safe to eat – just give the bottle a light shake before use.
