Josh Eggleton

The former chip shop worker who went on to be one of the youngest pub and restaurant proprietors in the country.

Born and raised in Chew Magna, near Bristol, Josh’s first job in the industry was working at the local chip shop aged 15. He soon progressed to a neighbourhood pub and in 2003 won the Gordon Ramsay College Scholar competition.

Having worked for two years as head chef in Bristol’s harbourside The Olive Shed, Josh travelled the world where he gained experience at Sicily’s il Mulinazzo, New York’s Chanterelle and the three Michelin-starred French Laundry in California.

At 22, with the backing of his family, in 2006 Josh became one of the youngest pub and restaurant proprietors in the country by taking over The Pony & Trap. It won a Michelin star in 2011 which has been maintained.

Josh’s grandparents were evacuees during the war and he has drawn inspiration from them for his menu.
