His talent caught the eye of former Great British Menu champion Tom Aikens for whom he worked as head chef for four years at his flagship Michelin starred restaurant.
Lee went on to oversee two restaurants for chef and restauranteur Jason Atherton in Hong Kong followed by stints at some of the world’s best restaurants including Noma in Copenhagen and Per Se in New York.
Now focusing on his first solo venture, Lee is building a reputation for his innovative approach to modern European food.
His menu takes inspiration from classic Women’s Institute techniques to modern day campaigns.
