Josh’s first job in the industry was working at the local chip shop aged 15. He soon progressed to a neighbourhood pub and in 2003 won the Gordon Ramsay College Scholar competition.

Having worked for two years as head chef in Bristol’s The Olive Shed, Josh travelled the world where he gained experience at Sicily’s il Mulinazzo, New York’s Chanterelle and the three Michelin-starred French Laundry in California.

At 22, with the backing of his family, Josh became one of the youngest pub and restaurant proprietors in the country by taking over The Pony & Trap. It won a Michelin star in 2011 which has been maintained.

Since appearing in the competition last year, Josh has opened his second venture, Salt and Malt, a tearoom and fish café located on the waterside of Chew Valley Lake.

This is his second appearance in the competition, missing out last year to banquet champion Emily Watkins. His menu represents the multitude of values and campaigns supported by the Women’s Institute.
