Indian-style chicken wings with tamarind dipping sauce

Chicken wings are marinated in an Indian-style coating and then served with a spicy tamarind sauce for dipping.

You will need 2 metal skewers for this recipe.

Method

  1. To make the chicken wings, place the wings and stock in a large saucepan. Poach the chicken gently for 45 minutes until tender. Remove and chill in the fridge to firm up.

  2. To make the marinade, mix all of the ingredients together in a large bowl. Add the wings and mix to coat thoroughly. Leave for a minimum of 2 hours to marinate, in the fridge.

  3. Pre-heat a grill to very hot. Thread the wings onto two metal skewers and cook under the hot grill for 6–8 minutes until blistered.

  4. To make the dressing, mix all of the ingredients in a small saucepan and add water to loosen. Cook until reduced by half. Leave to cool.

  5. Serve the chicken wings with all of the garnishes, the tamarind dressing and lime wedges.
