It's easy to see why these hot honey beef bowls have been a viral hit on social media. Super simple to make using easy to buy ingredients, yet packed full of flavour and with bags of protein and fibre to keep you feeling full for hours. Fantastic for a filling lunch or healthy dinner.
Ingredients
For the sweet potato
- 300g/10½oz sweet potato, washed and chopped into small cubes
- 1 tbsp rapeseed oil
- 1 tsp smoked paprika
- 1 tsp ground cinnamon
- ½ tsp ground cumin
- sea salt and cracked black pepper
For the beef
- 1 tbsp rapeseed oil
- 400g/14oz beef mince
- 1 tsp garlic powder
- 1 tsp ground cinnamon
- 1 tsp cumin
- 1 tbsp sweet smoked paprika
For the hot honey
To serve
- 1 avocado, peeled and stone removed
- 30g/1oz salad leaves
- 200g/7oz cottage cheese
Method
Preheat the oven to 200C/180C Fan/Gas 6.
Put the sweet potato cubes in a roasting tin. Add the oil, spices and a pinch of salt and pepper. Stir to coat the sweet potatoes in the spices. Roast in the oven for 20 minutes.
Meanwhile, prepare the beef. Heat the oil in a frying pan over a medium–high heat then add the beef. Fry for 3–4 minutes or until the beef begins to brown. Add the spices along with a generous pinch of salt and pepper. Fry for a further 3–4 minutes or until the beef is fully cooked.
To make the hot honey, place the honey in a small, heavy-bottomed saucepan. Sprinkle in the chilli flakes and warm very gently over a low heat just until the honey starts to bubble. Turn off the heat and leave to infuse for 5 minutes.
When ready to serve, divide the sweet potato between two bowls. Spoon in the cooked beef and add a handful of salad leaves.
Slice the avocado and add half to each bowl before spooning on the cottage cheese.
Finish with a generous drizzle of hot honey and a crack of black pepper.
