  1. Heat the oil and butter in a frying pan and add the onion. Cook the onion until softened but not coloured.

  2. Add the garlic and mushrooms and cook for 3–4 minutes until the mushrooms are soft but have not released their juices.

  3. Add the wine and reduce the volume of liquid by half.

  4. Stir in the crème fraîche and parsley and heat through. Season to taste and serve.

Recipe tips

This mushroom sauce can be used in so many different ways. Serve it with rice or stirred into pasta. Mix it with leftover roast chicken for a quick pie filling. Serve alongside grilled meats, such as pork, chicken and steak. Or try it as an easy starter served on top of toasted sourdough with a few slices of crisp streaky bacon or pancetta.

Any mushrooms will work in this recipe, just chop any larger mushrooms into bite-size pieces.

If you prefer, double cream or soured cream can be used instead of crème fraîche. Bear in mind that double cream is liable to split if cooked over a high heat, so reduce the heat before stirring into the sauce.
