Possets are a very simple English dessert typically made with lemon juice, cream and sugar. They are remarkably quick and easy to make and a good posset will have a silky smooth texture. They are very similar to a panna cotta, but you do not need gelatine to make them set.

Nothing could be easier than lemon posset – it's cream, sugar and lemon juice, stirred together. But doesn't it look fancy? Add crunch with cute lemon thumbprint biscuits on the side.
