Fortified wine recipes

Fortified wine is a wine which has been treated with a spirit, usually brandy. Sherry, port. Marsala and Madeira are all examples of fortified wine. Their rich tastes make wonderful additions to sweet and savoury recipes. Try roasting lamb with Madeira gravy, adding Marsala to a festive pudding or pouring a drop of sherry into a chicken pie.
