Originally from the Wirral Mark began his career working in local restaurants before making the leap into fine dining working with Simon Radley at the Chester Grosvenor Hotel. He then left to undergo a cook’s tour of the UK working in some of the country’s best restaurants, including at Petrus for Gordon Ramsay.
He is currently head chef at 1851 Restaurant at Peckforton Castle.
The 1851 Restaurant holds 3 AA Rosettes as well as a Taste Cheshire Award and features classically based dishes with modern interpretations and techniques.
Mark's greatest influence is mentor Simon Radley.
Mark is basing his menu on his nan’s experience of food whilst growing up in wartime Britain.
