These translucent round sheets made from rice starch are typically used in Vietnamese cuisine to make summer rolls. But that's just the beginning. Use them as a substitute for rice noodles, as dumpling wrappers or even make a fantastic vegan crackling.

Storage
Rice paper wrappers last a long time if stored in a cool, dry place.
Preparation
By dipping the brittle sheets briefly in water, the sheets become pliable but very sticky. To make summer rolls you must work quickly and it helps to have damp hands. Fill the sheets with vegetables, cooked prawns or chicken, herbs, whatever you like. Then wrap them like a spring roll and set aside while you make the rest. A flavoursome dipping sauce is a must.
