Method
Peel and de-seed the cucumber, then coarsely grate. Put the grated cucumber in a muslin cloth or a clean tea towel and squeeze out any excess liquid.
Combine the yoghurt, cucumber, lemon juice and garlic.
Recipe tips
It's important to use fresh garlic as it tends to get a bit bitter and musty if it's been hanging around a while.
Stir in some freshly chopped herbs if you like, mint and dill work well.
