  1. Peel and de-seed the cucumber, then coarsely grate. Put the grated cucumber in a muslin cloth or a clean tea towel and squeeze out any excess liquid.

  2. Combine the yoghurt, cucumber, lemon juice and garlic.

Recipe tips

It's important to use fresh garlic as it tends to get a bit bitter and musty if it's been hanging around a while.

Stir in some freshly chopped herbs if you like, mint and dill work well.
