A cosmopolitan but not quite like you’ve had before! Infused with flavours of autumn from fresh pear and cinnamon, you need to try this to know how special it is.
Ingredients
For the pear and vanilla infused vodka
- 2 ripe yellow pears, washed, cored and sliced into thin wedges
- 1 vanilla pod, split and seeds scraped
- 500ml/18fl oz vodka
For the cinnamon syrup
For the spiced pear cosmo
- 50ml/2fl oz pear and vanilla infused vodka (see above)
- 25ml/1fl oz cloudy apple juice
- 20ml/¾fl oz pear brandy
- 10ml/⅓fl oz fresh lemon juice
- 10ml/⅓fl oz cinnamon sugar syrup (see above)
- ground cinnamon, to garnish
Method
To make the pear and vanilla infused vodka, place the pears, vanilla pod and seeds into a large, clean jar.
Pour over the vodka, seal tightly, and shake gently. Store in a cool, dark place for 5–7 days, shaking once daily.
Taste after 5 days, if the flavour is bold enough, strain through a fine sieve or coffee filter to remove solids.
Bottle the infused vodka in a clean, airtight container.
To make the cinnamon syrup, combine the sugar and 100ml/3½fl oz water in a small pan. Add the cinnamon stick and heat gently, stirring until the sugar dissolves. Simmer for 5 minutes, then remove from heat.
Let the cinnamon infuse as it cools, leave for 1 hour for subtle spice or longer for stronger. Strain and bottle, it will keep in the fridge for about 2 weeks.
To make the spiced pear cosmo, add all ingredients to a cocktail shaker with ice. Shake hard until well chilled.
Fine strain into a chilled coupe or martini glass. Garnish with a dusting of cinnamon.
