Mint grows so freely that once you know the trick you never need buy mint sauce again. Blanching the mint with boiling water helps to dissolve the sugar and to keep the colour in the mint leaves. This will keep in the fridge for up to 3 days.

Ingredients
- 30g/1oz bunch of mint
- pinch salt
- 4 tbsp boiling water
- 4 tbsp white wine vinegar (see Recipe Tips)
- 1 level tbsp caster sugar
Method
Strip off the mint leaves, sprinkle with salt and finely chop.
Transfer to a serving bowl or jug, add the sugar and pour over the boiling water. Stir and leave to cool.
Stir in half the vinegar, taste, and add the remaining vinegar if needed. Add more water or salt to suit your taste.
Keep in the fridge for up to 3 days. Serve with lamb.
Recipe tips
You can also use red wine vinegar or cider vinegar to make mint sauce.
