Pancake Day pancakes

Learn how to make pancakes for Pancake Day with this easy recipe. Top them with the classic lemon and caster sugar, or splodge with chocolate sauce or maple syrup for a real treat.
Ingredients
- 120g/4oz plain flour
- pinch salt
- 2 free-range eggs
- 210ml/7fl oz milk
- 1 tbsp vegetable oil
- unsalted butter, for frying

Method
Mix the flour and salt together in a large bowl.
Make a well in the centre and crack in the eggs.
In a jug, mix together the milk and 6 tablespoons cold water.
Beat the eggs into the flour mixture. Gradually mix in the milk and water mixture to make a smooth batter the consistency of single cream.
Stir in the oil and ideally allow to stand for 30 minutes before using.
When you are ready to cook the pancakes, heat a non-stick frying pan until very hot and add a small knob of butter. Once the butter is melted, pour in a ladleful of pancake batter, quickly tilting the pan to coat the base evenly with the batter. Cook for 30 seconds to one minute, until the underside of the pancake is lightly browned.
Using a palette knife or turner, gently flip the pancake over and cook on the other side for a few seconds, until lightly browned. Slide the pancake onto a plate, cover with baking paper and keep warm. Repeat the process with the remaining batter.
To serve, sprinkle the pancakes with caster sugar and lemon juice.
Recipe tips
Resting the pancake batter for 30 minutes gives softer more tender pancakes, but isn't essential.
The size of your pan will determine how large your pancakes are. Using a good non-stick pan really does make cooking pancakes much easier but you don't need a specialist pancake pan.
