  1. Heat a barbecue or griddle pan to a high heat.

  2. Place the pineapple in a large bowl. Add the lime juice, maple syrup, ginger and rum and mix well to combine.

  3. Cook the pineapple for 2–3 minutes on each side, or until lightly charred.

  4. Serve with the yoghurt or crème fraiche.
