Fried cabbage

Pan fried cabbage is super easy and quick to cook and it makes a great side for rich meals like roast dinners. Keep it simple by adding just a little garlic, or jazz it up with a little sliced chilli, bacon lardons or flaked almonds (see recipe tip).
Ingredients
- ½ green cabbage (such as Savoy or sweetheart)
- 2 tbsp vegetable oil
- 2 garlic cloves, thinly sliced
- salt
Method
Remove the tough white root and core from the cabbage and separate the leaves. Slice the leaves into finger-width pieces.
Wash the shredded leaves in a colander under cold running water.
Add the vegetable oil to a large frying pan over a medium–high heat.
Add the cabbage and sliced garlic cloves. Stir-fry until the cabbage starts to wilt (about 1 minute). Add in 3 tablespoons water and a pinch of salt. Cover with a lid (or foil) and cook for a further 3 minutes until tender.
Serve immediately.
Recipe tips
If you like you can add extras to this basic recipe to give it a flavour boost. Thinly sliced chilli can be added with the garlic. Fry up some bacon lardons before adding the cabbage and use the rendered oil to fry the cabbage. Toss in toasted nuts or flaked almonds for the final minute. Or try using a more flavourful oil – a nice fruity olive oil would work well.
