Crisp onion and rocket salad

Ingredients
- 55g/2oz rocket
- 1 tbsp olive oil
- ½ lemon, juice only
- ½ red onion, finely sliced
- 1 tsp brown sugar
Method
Place the rocket leaves into a bowl with half a tablespoon of olive oil and the lemon juice and mix well.
Heat the remaining olive oil in a small frying pan and fry the onion with the sugar until crisp and caramelised.
To serve, place the dressed rocket onto a serving plate and top with the onion.
