Margaritas are the taste of summer, holidays and fun. Learn how to make it perfectly and you'll always be in demand at parties.

Fresh lime juice is essential (the stuff from a bottle doesn't cut the mustard here) as this recipe uses more than you sometimes find, which makes for an extra fresh and zesty margarita.

  1. Prepare the glass by dampening half the rim with water. Dip into salt so it sticks to the rim of the glass.

  2. Pour the tequila, orange liqueur and lime juice into a cocktail shaker.

  3. Add a handful of ice cubes and shake vigorously for 10–15 seconds. Taste and add a little sugar syrup, if desired.

  4. Strain into a martini glass (or glass of your choice) and add a lime wedge on the rim to garnish.

Recipe tips

It's worth investing in some top-notch tequila if you want your margaritas to be perfect. The flavour of tequila really dominates this drink and they do vary hugely. You want a good-quality tequila blanco (also called silver or plata tequila).

Depending on how juicy your limes are, you'll get about 2 tablespoons (30ml) of juice from each lime. To buy the juiciest limes, look for a lime with bright green skin that feels heavy for its size and gives a little when you gently squeeze it. Roll the limes on the worktop before juicing; this helps extract more juice.
