small handful fresh coriander, finely chopped
½ red onion, finely chopped
1–2 green chillies, deseeded and finely chopped
1 lime, juice only
sea salt and freshly ground black pepper
1–2 onions, finely chopped
few handfuls fresh coriander leaves

500ml/18fl oz chicken stock

Cooking ingredients

2 tbsp soft light brown sugar
1 tsp smoked paprika
1 tsp dried oregano
1 tsp ground cumin
190g/6¾oz ancho chilli paste
100g/3½oz chipotle paste
7cm/2¾in cinnamon stick
1 tbsp tomato purée
salt and freshly ground black pepper

pinch caster sugar
splash vegetable oil

Dairy, eggs and chilled

200g/7oz cheddar, grated
200g/7oz mozzarella, grated

Meat, fish and poultry

1 bone-in turkey thigh or leg (about 750g/1lb 10oz)
