Dosa recipes
A dosa is a thin, crisp-edged, savoury, southern Indian pancake that contains a multitude of lovely things. From potato masala to cheese and chilli, to just plain with ghee, there's a dosa for everyone. They are usually made from ground flour and urid dal (split black lentils) that have been soaked and fermented overnight. You can buy packet mix to make dosa, but nothing beats the real thing.

Although often called a type of lentil, urid dal is actually related to cowpeas and mung beans. This is what forms the dosa base to this recipe, along with parboiled rice. Serve with a spiced potato filling and chutney.
