Beef consommé recipes

Beef consommé is a flavourful soup made from boiling beef, carrots, celery, stock and egg whites. As the consommé cooks, the egg whites rise to the surface and take any impurities with it. Once the mixture has been strained, you are left with a fragrant, meaty soup that is delicious on its own or used in stews or stroganoff.
