Curry goat and rice

Curry Goat and Rice( by Helen )

This dish is delicious served with a side order of salad and coleslaw.

Ingredients:

News imageVinegar
News imageOnions

News imageMild Curry powder
News imageWhite or brown rice

Preparation: Put meat in a sauce pan of cold water, bring to the boil then drain off excess water. Then wash the meat with lemon and vinegar. Season the meat with onions, garlic, primento seeds, thyme, chilli peppers, salt, black pepper, mild curry powder (not too much curry powder though). Give the meat a good rub so the seasoning soaks in well.

Put everything into a pressure cooker or large saucepan and add 1 or 2 bay leaves. Cover the sauce pan tightly and cook slowly till meat is soft. The meat will steam to make it's own juices. However if there isn't enough, you can add a bit of hot water depending on how much juice you want. Cook the rice as normal.

Ackee and saltfish (by Denise)

Perfect served with fried dumplings and a side order of salad.

Ingredients:

Preparation: Soak the saltfish in water overnight. Remove skin and bones. Boil ackee until it softens. Fill frying pan with one quarter cup of cooking oil. Add sliced onions, sweet pepper, tomato and simmer under slow fire. Cut saltfish into small pieces and add to frying pan and continue cooking under slow fire.

Lastley add ackee and stir together. Sprinkle with black pepper and cook slowly for another 2 minutes. Tastes delicious with fried dumplins.

Rum punch (by Helen)

Ingredients:

News imageAngostura bitters
News imageJamaican white rum

Individuals add as much rum as they like depending on what the punc is for. Serve with crushed ice.

Fried Dumplings (by Denise)

Fried dumplings go with everything from fried chicken and fish to ackee and saltfish.

Ingredients:
News imageSelf raising flour
News image1/4 teaspoon of margarine
News imageA pinch of salt
News image1/2 cup of skimmed milk
News image1/4 cup of water

Preparation: Knead flour with margarine, salt, milk and water until dough is fluffy. Prepare frying pan with 1/4 cup of oil and heat under a low fire. Remove small pieces of dough and roll into a small ball. Partially flattern top layer to form the shape of a small pancake. Add each rool to the frying pan and cook slowly until each side is slightly golden.

Mackeral Rundown(by Denise)

Great served with rice or salad

Ingredients:

Preparation: Soak mackerel in water overnight. Boil coconut milk under moderate fire for 15 mins. Add seasoning and cook under a slow fire for 5 mins. Remove skin from mackerel and cut up into small pieces, then add to the mixture. Cook for 15 - 20 mins under slow fire until mixture is slightly thick.
