The visitors had been set an astronomical 506 to win, but did not look too badly off on 152-2 at tea.
But Bruce got one ball to jag back with pace to trap Will Smith lbw and Dominic Thornely's swinging yorker was too much for Stephen Fleming, also out lbw.
Bruce then ripped out the middle order with Nic Pothas accepting three catches, then Shaun Udal bowled Paul Franks.
Finally, Shane Warne - who had removed both Notts openers - trapped last man Charlie Shreck lbw with eight men crowded round the bat and the shadows lengthening.
Opener Jason Gallian had provided the best score for Notts, with 67.
Afterwards, Bruce said: "It is my first five-for in Championship cricket so I'm very happy.
"We just knew after tea we had to step it up a gear and take a few quick wickets.
"As soon as I came on after tea it started moving around. It was beginning to reverse a little bit and the odd one held to catch the outside edge."
