From his paintings of Californian swimming pools, to his Polaroid collages; his iPad drawings, to videos of his favourite country lane - as he approaches his 80th birthday, David Hockney continues to change his style and embrace new technologies. In a major retrospective of his work, Tate Britain in London is showing many of his most famous works from the 1960's to the present day. Charlotte Mullins reviews.
