Sarah Swadling is out on the water in Essex finding out how John Labbett, who farms oysters, is coping with an emerging disease threat. He says that Oyster Herpes can kill up to 90% of young Pacific oysters on an infected farm in a day, although it doesn't affect human health. John also cultivates Native oysters, which were historically important in Essex, and he tells Sarah that rebuilding stocks is his passion. This programme is presented and produced by Sarah Swadling.
