Brent Young is co-founder of The Meat Hook butcher's shop in Brooklyn, New York. He tells Emily Thomas why so many young people - often with high-flying well paid jobs - are drawn to butchery with its long hours and physical, bloody work. They are joined by Isioma Emina from Reds and Greens in Lagos.
