'I don't think eating a mealworm, is worse than eating a cow'

Two of the projects shortlisted for The Food Chain Global Food Champion Award involve insects. Biteback is replacing palm oil with mealworms and Magmeal is maggot-based animal feed.

With reference to these projects, two of the judges - food historian Polly Russell and chef Pierre Thiem - explain why they think insects are the food of the future.
