None of his cooking student graduates until they can stare in to a cast-iron pot and identify the seven nations that make up a Cajun gumbo, says chef John Folse. He tells the BBC's Dan Saladino why he thinks it's so important to see that American people are like a pot of gumbo: all mixed up and delicious.
