Bryn Williams takes the complexity out of fine dining with his impressive-but-achievable herb-crusted sea bass, with red pepper piperade and a balsamic dressing. Sabrina Ghayour rustles up three dishes as part of a Persian feast: harissa and honey-baked halloumi, tamarind aubergines, and pea, saffron and garlic rice.

Lee Tieu celebrates Pancake Day with Japanese souffle pancakes, Ben Tish prepares pork chops, walnut picada and salt-baked roasted vegetables, and Vivek Singh creates a jackfruit curry with lemon rice.
