Butcher - slaughterhouses have been fighting for survival in recent years and a study from Hybu Cig Cymru last year cited a shortage of skilled workers and the unwillingness of youngsters to take on family abattoirs as part of the problem. But Catherine Butler is a bucking that trend - after more than a decade helping her father run the family's abattoir and butchers, she has officially taken the reins as the owner of the company following her father's retirement.
