Tom's Perfect Roast Potatoes

8Large Maris Piper potatoes
1Pinch of sea salt
4 – 6Vegetable oil

Method

1. Peel the potatoes using a vegetable peeler and then cut into even size 2-3 inch pieces.

2. Bring a large saucepan of water to a simmer with a large pinch of salt. Add the potatoes and poach gently for 20 – 25 minutes or until the potatoes are cooked all the way through. Test this by lifting a potato out with a slotted spoon and placing a skewer through the potato. If it goes all the way through with ease – it’s cooked!

3. TOP TIP! Lift each piece of potato out and place onto a wire cake rack to dry. Meanwhile preheat the oven to 200C.

4. Pour the vegetable oil into a roasting tray and place into the oven for 5 - 10 minutes to heat up. When hot carefully remove the roasting tin and gently add the dried potatoes to the pan, one by one and listen to them sizzle. Season with a pinch of sea salt and place them back into the oven for around 45 minutes, making sure to turn them at least once during the cooking time.

5. Remove from the oven and serve whilst hot. Serve alongside your favourite Roast, vegetables and gravy!
