Specialist children's dietitian Angharad Banner has created this quick, simple and nutritious recipe using courgette, sweetcorn and lentils. These tasty little treats are packed with fibre, protein, and vitamins.

Ingredients
½ medium onion
1 clove garlic
1 medium courgette (150 g), grated and squeezed dry
100 g cooked red split lentils, drained
50–75 g sweetcorn kernels (fresh off the cob or thawed frozen or drained tinned)
1 medium egg
3 tbsp plain flour
½ tsp ground cumin
Pinch of pepper
A little oil for frying

Chopping board
Box grater
Mixing bowl
Mixing spoon
Nonstick pan
Tablespoon
Method
1. Cut the onion and garlic into fine pieces.
2. Grate the courgette and squeeze out any moisture.
3. In a bowl mix together the lentils, courgette, sweetcorn, onion, garlic, egg, flour, cumin, and pepper.
4. Heat oil in a nonstick pan over a medium heat.
5. Place 1 tablespoon of mixture into the frying pan and fry 3–4 min per side until golden.
6. Let them cool down and enjoy!

Tip one: Choose red lion eggs
