Tomatoes, ginger, garlic.
Garam Masala
(we make our own)
Cardamom,
Cinnamon,
Bay leaves. Cloves.

Meat is lamb, fresh lamb.
Chicken, also, and fish.
King prawns from Bangladesh -
Everything, fresh.

I like best, garnishing –
A flower, from a tomato
Fresh coriander, sprinkled on,
Lemon, in all kinds of shapes.

End of the day, yes, I’m tired -
But I’m satisfied.
