Hildreth reached his ton off 94 balls, finishing the day unbeaten on 119 as Somerset racked up 407-6 against a bowling attack shorn of Monty Panesar.
Teenager Sam Spurway produced his best first-class score of 83 and Arul Suppiah was run out for a patient 98.
Ian Blackwell, in his comeback game, lashed 43 from just 35 balls faced.
It was a bittersweet day for Suppiah.
Already dismissed for 99 on the same ground this season, the Malaysian had batted for five hours when responding to Hildreth's call for a quick single and failing to beat Steven Crook's direct hit.
