RECIPE: Ingredients: 4 chicken breasts 1 pack pre rolled shortcrust pastry sheet 3 onions Fresh thyme Lemon juice Garlic cloves Mushrooms Cream cheese/ Philadelphia Handful of spinach Instructions: In a roasting pan, put the four chicken breasts. Add enough water to cover base of pan. Place fresh thyme, salt and pepper on top of chicken. Cover and roast on 180 degrees for 35 mins or until cooked through. Take out of oven and set aside. Next, sauté the onions and mushrooms together in a pan with a little oil. Add spinach and cook through until wilted. Unroll the pastry. Spread the soft cheese all along the centre of the pastry. Next, spread the mushrooms and onions on top of soft cheese. Slice chicken in half, and overlap along the base layer until it meets end to end. Thinly slice the garlic and sprinkle over the top of chicken. Next, fold pastry over to meet on the middle and fold over the ends - just like wrapping a gift. Pinch and seal. Score top lightly with a diamond pattern. Brush with milk and bake at 180 degrees for 25 mins or until golden brown.
