Chef Doug McCaster is the founder of Silo, the world's first zero-waste restaurant and finalist in the Basque Culinary World Prize. After its initial success in Brighton, Doug has brought his zero-waste restaurant to London, using upcycled materials to furnish and supply the restaurant, and local produce to reduce food miles and over-processing.
