Stilton Cheese has been a welcome Christmas treat for more than 200 years. Made exclusively in Leicestershire, Nottinghamshire and Derbyshire, the largest manufacturer is Long Clawson Dairy, based in the village of the same name in the depths of rural Leicestershire. All the milk that's used to make the cheese comes from the 45 members of a cooperative that in effect owns the dairy, and produces the fifty-eight-MILLION litres of milk that's needed every year.
