Ed Stagg sits in for Ben Jackson Base: ½ pack of crushed digestive biscuits 4oz butter Filling: 2 x tins condensed milk Juice & rind of 1 lemon 2 x egg yolks 200ml lemon juice Topping: 6 x egg whites 6oz sugar Method: Preheat the oven to 180 degrees/gas mark 4 Bash up biscuits and melt the butter before combining the two and pressing into the bottom of a sandwich tin and pop into the fridge to cool Meanwhile, combine the filling ingredients in a bowl and whisk until the eggs are well beaten into the mixture Take the base out of the fridge and pour filling into the tin Place the tin into the oven and bake for ten minutes to set the eggs and mixture Whilst that’s happening, whisk the egg whites gradually adding the sugar slowly until it forms soft peaks Once ten minutes is up, remove the pie from the oven and spoon the beaten egg whites onto the top, mounding it from the middle out Place the tray back into the oven and bake for around 20 minutes but keep a close eye on it as the peaks of meringue could burn if you’re not careful! Take out of oven, allow to cool and place a guard dog nearby to protect from eager hands…
