Let's face it, making a Christmas cake is no mean feat. There's lots of ingredients, they take hours to cook and then you have to feed it with brandy for weeks on end. It's no wonder most people don't bother. Well imagine making thirty five thousand of them. All by hand. That's exactly what Fiona Cairns, who you'll remember made the cake for the Royal Wedding, does at her factory in Fleckney.
