High in the Yorkshire Dales, Andrew and Sally Hatton are taking a leaf out of the history books to set their Nidderdale hill farm on a solid footing for the future. They’re making a traditional seasonal unpasteurised farmhouse cheese with milk from their small herd of critically rare Northern Dairy Shorthorns. It’s the kind of cheese and breed of cattle that were commonplace in the Dales a hundred years ago, but now both are very rare.
