Pasta Shell Salad with Roasted Red Onions and Basil

Serves 20

Ingredients

  • 1kg dried pasta shells
  • 6 red onions
  • 8 tomatoes

Basil dressing

  • 200g fresh basil
  • 1 clove garlic
  • 200g Parmesan cheese
  • 700ml olive oil
  • 1 tsp salt
  • black pepper to taste

Method

1. Pre heat the oven 200°C / 400°F / Gas Mark 6

2. Place a pan on the heat with water and a good pinch of salt and bring to the boil, cook the pasta as per the times on the pack as different makes my vary. Once cooked, drain and cool in cold water, then when cold drain again.

3. Peel and cut the onions into wedges around 8 to 10 per onion and place on a oven tray and drizzle with a little olive oil. Cook for 10 minutes until cooked and golden brown, remove and cool.

4. To make the dressing place the garlic, basil, remaining olive oil and cheese into a blender and blend for 2 to 3 minutes into a dressing is made.

5. Chop the tomatoes into small dice and add to the drained pasta. Pour over the dressing and add the onions and the oil left in the tray from roasting also.

6. Stir and season to taste and serve.
