Flat Mushrooms with Spinach, Basil and Parmesan
Serves 4
Ingredients
- 8 large flat mushrooms
- 200g fresh picked and washed spinach
- 8 large basil leaves
- 150g grated fresh parmesan
- 250g fresh breadcrumbs
- 50ml olive oil
- 50ml drop of cream
- Nutmeg (pinch)
- 2 large peeled and small dice of onion
Method
1. Pre heat the oven to 180C / 350F / Gas Mark 4.

2. Remove the stalk from the mushroom then carefully remove the outer skin of the mushroom place on a lightly greased tray season with salt and pepper and drizzle a little of the oil on top. Than bake in the oven for approx.. 8 - 10 minutes remove and allow to cool slighty
3. In a large frying pan place the onions along with a little more of the oil and cook for 2 - 3 minutes then add the spinach allow this to wilt slightly before adding the basil nutmeg and cream cook for a further 2 minutes then remove from the heat.
4. Divide the mixture between the mushrooms.
5. In a clean bowl mix the breadcrumbs and the cheese sprinkle over the top of the filled mushrooms and place the tray back in the oven to cook until golden brown.
