Apple Pie
Serves 120
Ingredients
- 2.25kg x 5 tins apples
- 3.2kg flour
- 1.3kg margarine
- 14 eggs
- 680g sugar
- 10g cinnamon
- 450g sugar for top
- 2 eggs for top
Method
1. Open tins of apples and drain

2. Sprinkle with a little sugar and cinnamon
3. Mix margarine into flour to form a crumble
4. Add sugar and eggs gradually until bind together to make a soft but firm dough mix.
5. Leave pastry to rest for 30 minutes
6. Roll pastry out 5mm thick to make bases for pies, and trim
7. Add apples evenly
8. Roll pastry on top of apples and trim
9. Mix 2 eggs together brush on a little of egg mix on tops and sprinkle with sugar
10. Bake in preheated oven at 200C for 25/30 minutes until golden brown
11. Serve with custard
